Production technology: Reducing the yield of grapes by 50%. Cold maceration on the must for 3 days. Alcoholic fermentation in an oak barrel (225 l). Malolactic in an oak barrel. Use of strain yeast and bacteria in both ferments. Excerpt on fine lees for 4 months.
