Biologist Odessa Black 2019



Powerful and unforgettable dry red wine from autochthonous Ukrainian grapes. The aroma of black berries, with tones of mulberry and smoke. The taste is rich, tannin, with notes of aging and dried fruit. Odessa Black perfectly harmonizes with complex meat dishes, hot salads and smoked meats. Balanced acidity and good tannins go well even with fatty dishes such as pork kebab or lamb stew.

Production technology: Reducing the yield of grapes by 50%. Cold maceration with stalks for 10 days. Alcoholic fermentation in a stainless container. Wild yeasts, spontaneous fermentation. Malolactic in an oak barrel (225 l). Aging in oak barrels for 6 to 9 months.

Alcohol: 14%.

Harvest year: 2019.

Grape varieties: 100% Odessa Black (Alibernet).

The total amount of the 2019 harvest is 1,500 bottles of 0.75 liters.
