Bright and aromatic Irsai Olivér pét-nat. Ancestral Method of making pét-nat is almost certainly the oldest, emerged a lot earlier - more than half a century ago - than the traditional one. The method in which the primary fermentation is stopped before completing, and a secondary fermentation occurs in the bottle: produced carbon monoxide stays trapped in the bottle until the cork is removed. Alcohol level is lower than that in other sparkling wines. The pressure is lower as well, so perlage is more delicate. The wine is not filtered, so it will look cloudy with yeast residue in a glass. Nevertheless, the wine has bright flavor and gastronomic acidity.
